  • 1 pound ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


  1. In a mixing bowl, combine the ground meat, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well.
  2. Divide the meat mixture into 8 equal portions. Shape each portion into a cylindrical kebab shape around a skewer.
  3. Preheat the grill to medium-high heat.
  4. Brush the kebabs with olive oil to prevent sticking.
  5. Place the kebabs on the grill and cook for about 6-8 minutes, turning occasionally, until browned and cooked through.
  6. Remove the kebabs from the grill and let them rest for a few minutes before serving.
  7. Serve the kofta kebabs hot with your choice of dipping sauce or as a filling in pita bread with vegetables and yogurt sauce.
