- 1 pound ground beef or lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- In a mixing bowl, combine the ground meat, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix well.
- Divide the meat mixture into 8 equal portions. Shape each portion into a cylindrical kebab shape around a skewer.
- Preheat the grill to medium-high heat.
- Brush the kebabs with olive oil to prevent sticking.
- Place the kebabs on the grill and cook for about 6-8 minutes, turning occasionally, until browned and cooked through.
- Remove the kebabs from the grill and let them rest for a few minutes before serving.
- Serve the kofta kebabs hot with your choice of dipping sauce or as a filling in pita bread with vegetables and yogurt sauce.
