Mixed Herb-Stuffed Rolled Oven Roast

  • 2 pounds beef tenderloin, butterflied and pounded
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil


  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the parsley, rosemary, thyme, garlic, salt, and black pepper.
  3. Lay the butterflied beef tenderloin flat on a clean surface. Spread the herb mixture evenly over the meat.
  4. Roll up the beef tightly and tie it securely with kitchen twine at 1-inch intervals.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the rolled beef on all sides until browned, about 2 minutes per side.
  7. Transfer the skillet to the preheated oven and roast for about 1 hour or until a meat thermometer inserted into the center of the roast reads 130°F (54°C) for medium-rare. Adjust the cooking time according to your desired level of doneness.
  8. Remove the roast from the oven and let it rest for 10 minutes. Remove the kitchen twine and slice the roast into 1/2-inch thick slices.
