Ingredients
- 2 pounds beef tenderloin, butterflied and pounded
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 4 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the parsley, rosemary, thyme, garlic, salt, and black pepper.
- Lay the butterflied beef tenderloin flat on a clean surface. Spread the herb mixture evenly over the meat.
- Roll up the beef tightly and tie it securely with kitchen twine at 1-inch intervals.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the rolled beef on all sides until browned, about 2 minutes per side.
- Transfer the skillet to the preheated oven and roast for about 1 hour or until a meat thermometer inserted into the center of the roast reads 130°F (54°C) for medium-rare. Adjust the cooking time according to your desired level of doneness.
- Remove the roast from the oven and let it rest for 10 minutes. Remove the kitchen twine and slice the roast into 1/2-inch thick slices.
