Spicy Beef Tongue Tacos

Ingredients
- 1 beef tongue (approximately 2 pounds)
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce (from the chipotle peppers can)
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 small corn tortillas
- Optional toppings: diced onion, chopped cilantro, lime wedges, avocado slices
Instructions
- In a large pot, place the beef tongue, onion, garlic, chipotle peppers, adobo sauce, cumin, paprika, dried oregano, salt, and black pepper. Add enough water to cover the tongue.
- Bring the pot to a boil over high heat, then reduce the heat to low and let it simmer, covered, for about 2.5 to 3 hours, or until the tongue is tender and easily pierced with a fork.
- Remove the beef tongue from the pot and let it cool slightly. Once cool enough to handle, peel off the outer skin and trim off any excess fat. Slice the tongue into thin strips.
- In a skillet, heat the olive oil over medium heat. Add the sliced beef tongue and sauté for a few minutes until slightly browned.
- Warm the corn tortillas on a griddle or in a dry skillet over medium heat until soft and pliable.
- Assemble the Spicy Beef Tongue Tacos by placing a few slices of the tongue onto each tortilla. Top with diced onion, chopped cilantro, and a squeeze of lime juice. Add avocado slices if desired.
- Serve the tacos warm and enjoy the flavorful and spicy beef tongue filling!
