Thai Coconut-Peanut Beef Curry

Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can (14 ounces) coconut milk
  • 1/4 cup creamy peanut butter
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the sliced onion, minced garlic, and red bell pepper. Sauté until the vegetables are tender, about 5 minutes.
  3. Return the beef to the pot and add the coconut milk, peanut butter, red curry paste, fish sauce, brown sugar, and lime juice. Stir well to combine.
  4. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
  5. Season with salt and pepper to taste.
  6. Serve the Thai Coconut-Peanut Beef Curry over steamed rice or with noodles. Garnish with chopped cilantro and basil. Enjoy!
