Total Time: 35 minutes

  • 1 lb ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 2 green onions, chopped
  • Fresh cilantro leaves, for garnish

  1. In a large bowl, combine the ground pork, minced garlic, grated ginger, fish sauce, soy sauce, lime juice, and brown sugar. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. In a large pot, bring the chicken broth and coconut milk to a simmer over medium heat.
  4. Carefully add the pork meatballs to the simmering broth and cook for about 10-12 minutes, or until the meatballs are cooked through.
  5. Add the sliced bell pepper, mushrooms, and green onions to the pot and simmer for an additional 5 minutes, until the vegetables are tender.
  6. Serve the Thai Pork Meatball Soup hot, garnished with fresh cilantro leaves and red chili flakes (if desired). Enjoy!
