Ingredients
- 1 lb ground pork
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- 4 cups chicken broth
- 1 can (13.5 oz) coconut milk
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 2 green onions, chopped
- Fresh cilantro leaves, for garnish
- Red chili flakes, for garnish (optional)
Instructions
- In a large bowl, combine the ground pork, minced garlic, grated ginger, fish sauce, soy sauce, lime juice, and brown sugar. Mix well until all the ingredients are evenly incorporated.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, bring the chicken broth and coconut milk to a simmer over medium heat.
- Carefully add the pork meatballs to the simmering broth and cook for about 10-12 minutes, or until the meatballs are cooked through.
- Add the sliced bell pepper, mushrooms, and green onions to the pot and simmer for an additional 5 minutes, until the vegetables are tender.
- Serve the Thai Pork Meatball Soup hot, garnished with fresh cilantro leaves and red chili flakes (if desired). Enjoy!
